    I cooked small echpechmak. For "my own" I usually make large ones - the size allows you to put only 8 pieces on a baking sheet. "Guest" option - 20 pieces.

    The dough is traditional, Tatar: for a little more than 6 glasses of flour (this is a kilogram), 100 grams of butter (butter, melted, fat or margarine for baking), half a liter of sour thick milk (sour cream), salt. The preparation of this dough was described repeatedly (Tag "Tatar cuisine"). But this time I slightly changed the process of mixing the components.
    I melt the butter in the microwave. Two or three minutes at low power 120-180 W, and we have a solid melted butter mass. So, before introducing it into flour, I dissolved a teaspoon of salt in sour milk and added warm melted butter there. Mix until smooth, and then pour into flour. I'm still thinking about the chemistry and physics of this process. But the dough turns out much better.
    I won’t undertake to write about the formation of an echpechmak, you need to watch it. Or make a lot of echpechmaks to form an equilateral triangle with a hole from a circle of dough, so that the corners do not stick out with crooked squiggles.     Having wrapped the echpechmaks in foil and multi-layered fabrics and put them in a semicircular wicker basket, I went to the women's meeting to read the holy book. And this meeting was an amazing gift for me.
    I previously talked about abystay, which. After she once made a mistake, mentioning the names of the living in the memorial words, the mother-in-law decided to invite another woman. And this was an amazing woman who gave us all a holiday.
    She “read” in a low, rich, beautiful voice. Her hearing was perfect and the sacred texts not only sounded, they poured music of amazing purity. And not just she led the meeting, but talentedly coordinated the process. She prompted the moments when and what to do, without reproaching anyone for ignorance. Kindly explained all the required words and actions. Her target setting was correct - to read, to explain, to teach, to create an appropriate atmosphere. And she achieved this, with a smile, affectionately and kindly.
    And yet, the next majlis fell on Mawlid, the birthday of the Prophet (peace and blessings be upon him - it is customary to say after mentioning the name). And this old, beautiful woman began to talk about Mawlid. She told us about the Tatar religious traditions, which many families began to forget. And this tradition is religious songs in the Tatar language, which are sung on Mawlid. These are ballads that are performed in the Tatar melody, and in the usual vocal manner for Tatars. The texts of these old Tatar ballads tell about significant religious events and famous pious people, about the life of the Prophet himself (Remember, you need to add peace and blessings to him).
    We listened, and listened, spellbound. From time to time, abystai also attracted us to the action, we had to sing along the simple words of the anthem, form a symbolic circle, hugging each other. Time flew. How I wanted to record these songs, so that later I could listen to them carefully. I didn't understand everything in the text.
    May this woman be healthy and live long. I really want to meet her again and ask her to play these amazing Tatar ballads for recording. And if those songs cannot be sung at another time, I will look forward to the next Mawlid, and wait for this abystai, and wish her good health.

    It happened. How did you decide? Don't know. Rather, it so happened that she did it without thinking. I realized it only when in the evening a Tatar friend asked how I was not afraid to take on such a thing, and that she herself, alone, was afraid to do it. But, already from the height of her experience, she answered: “It is difficult, but not scary. There would be a desire, and there, they will help. So please seek advice."
    It is about the traditional Tatar gathering of women at the festive table with the reading of sacred texts. It must be said that collecting women is traditionally a matter for the older generation. Young people often do not see the point in this. And he attends such meetings only out of tribute to the traditions of his ancestors. Yes, and for the time being, this never occurred to me. But it so happened that at one of the meetings, fate brought me together with the amazing woman Oltin-beke, who turned our gathering into an amazingly beautiful action. () And she sang to us with her juicy strong voice old Tatar religious ballads. And I had no rest from the fact that I want to hear it again.
    When I tried to find any information about the religious chants of the Tatars, I found out with surprise that there is this “blank spot” in our history. And there are no serious studies on this topic, not to mention the texts themselves. Only someone remembered how a certain aunt or grandmother sang these songs a long time ago. And that's it. Was it possible to put a point here? Calm down that I'm one of the few who heard this? I thought for a long time. How will this woman react to the proposal to repeat it under the microphone? Will not be offended, will not condemn? They even contacted a friend, the owner of a recording studio. Maybe bring it there and write it down?
    I decided to have a serious conversation with my mother-in-law. Explained everything. My mother-in-law is an adequate woman, she took the negotiations into her own hands. "Let's try!" -she said. If he refuses, what can you do, but agrees - so we will do a good deed for our own - the record will remain in the family.
    The mother-in-law called back a couple of days later and said:
    - Oltin-beke agreed! Only she said that it is better to do it in your house. She has set a date and time, you must come and pick her up and bring her to your place.

    And I began to prepare for holding the Koran ashi in my house. And, comprehending what happened, I set out instructions for conducting.
    Such a meeting begins with the fact that you need to find a woman (women) who reads the sacred texts and negotiate with her. If there are any in the family, even better. Mark the date and time with her.

    Next, call all relatives of advanced and middle years. Invite them. Also call all other female relatives, starting from the age of the brides. It is customary to come to such events without fail. If there are close friends (according to the faith of Muslim ancestors), or neighbors, or their mothers, their names are also.

    Next comes the general cleaning of the apartment, along with washing the windows, washing the curtains, washing all the corners and nooks and crannies. If one of the guests is in your house for the first time, it is customary to show the entire apartment, including the bathroom and kitchen. On this topic, just in case, I prepared my youngest, if suddenly I don’t have time. Yes, and my mother was ready.

    Rooms. It is necessary to determine the room where to put children and men, set a small table there. Someone will come with a child, someone will be brought by her husband. And they need to find a comfortable place. At the same time, men will follow the children.

    Prayer room. Prayer time will definitely fall during this period. To do this, you need to prepare a completely clean room. After all, praying grandmothers will bow on the floor. Therefore, lower yourself into a similar position and check whether it is perfectly clean under your wardrobe and sofa. In the absence of a prayer rug, prepare large clean towels. And you also need to know where you have the west, where the east. You will definitely be asked about this in order to determine the right direction. Here my Tatar vocabulary was replenished with new words: kenbatysh - west, kenchygysh - east, tenyak - north, kenyak - south. How! Especially the south!

    Next, look at your bookshelves - if there are any photographs, paintings and souvenirs that are not appropriate for this event. I removed an Egyptian papyrus miniature depicting the god Ra, a painting by an artist friend depicting a hellish scene, and a couple of Cambodian figurines.

    Small gifts. It is customary for each guest, at the end of the meeting, to present small gifts. Most often, these are beautiful handkerchiefs, in which a banknote and a bag are wrapped in order to take kuchtanach with you - gifts from the table. Since I had only ten guests expected, I took the liberty of buying a headscarf for each. And do not invest a bill. For a Tatar, a scarf is never superfluous. Next, I also bought a bundle of pretty bags for baked goods. All this is rolled up: a handkerchief bag. It is laid out on a beautiful tray and left in an inconspicuous place in the room where the “reading” will take place.

    Place for kuptanach. Since each guest will come with his own baked goods - and these are usually trays and lyagans. It is necessary to prepare a place where all this is compiled, cut and laid out. There is also a stack of plates for this. Each brought gift is accepted with words of gratitude. We remember the dishes or the guest's tray. Lay out and cut only half of the gift. It is placed on the table. The second half will be divided and given to those who could not come - small children, nursing mothers, elderly parents. Well, of course, something will remain in the house.
    For this case, I identified a kitchen shelf on which there is a microwave oven, having cleared, first, all the shelves. I had to take away the laptop - it is on the shelf under the microwave and lies. If there are more guests, a corner will not save here. More space needs to be prepared.
    Also check if there are enough slippers for all. Should be enough. If not, go ahead and buy it. Or sew your own from an old man's leather jacket. Your guests should feel comfortable in your home.

    Entrance. We send the younger one to sweep and wash the entrance. Fortunately, the cottage has only two floors. The front door is not locked on this day. The one who is late knows and will quietly come in without a call.

Based on one kettle for three to four people. This is provided that everyone drinks tea of ​​the same variety. We have only one relative who drinks black, the rest all drink only green. Especially if they are older women who usually have high blood pressure - here green tea is the best thing. And it would be nice to add a blackcurrant leaf there. For flavor and pleasure.
    We drink tea from bowls. Uzbek specifics. Therefore, each hostess should have at least 20 of them. For noodles - casas, or soup cups according to the number of guests. Not enough - buy, they are very cheap. Beautiful salt shakers, pepper shakers, beautiful cups for chopped onions and dill - sprinkle noodles. This is the foundation.

    Menu.
    First: noodles (tokmach), unconditionally and undeniably. If you respect your guests, the noodles should be homemade.
    Second: potatoes with chicken in Tatar style. This is also inescapable. Some call it elesh.
    Third: something you must bake yourself. Your guests will bring the rest. I cooked echpemak.
    Preliminary: dried fruits - black and yellow raisins, dried apricots, prunes, peanuts, sugared peanuts, roasted peas, walnuts. All this is laid out highly artistically in tea saucers all over the table. It is pleasant to drink the first tea with this, and grannies love to put dried apricots and prunes in tea. Don't forget to bring teaspoons here! More good candy. I know from experience that our women respect soufflé and marmalade in chocolate. That is why I bought a little, different varieties, good Kharkov and Donetsk ones at Katartala.
    Vegetables: Tomatoes and cucumbers are served, cut into oval circles. Salt a little, decorate with greens. Others are not accepted.

    If there are several women in the family hosting Ash, each should cook. Since, besides me, there is only Lyalka in the family now, who can cook only buckwheat with mushrooms, pasta, and she was able to make belenlar - Tatar pancakes. Her pancakes turned out great. For the sake of this, I also had to run for a kaimak, so that they could serve pancakes complete with Lyalka's pancakes. Pancakes passed "hurrah".

    Now in detail about what, and how I cooked.

    Now about the broth. She took two chickens. Young, with delicate skin, they were not even a year old. Neatly gutted, perfectly cleaned, with long necks. I get these from my favorite shop on Katartala. One of them the night before turned into. I also put a mixture of kaimak and eggs inside. Boiled in a small amount of water. The broth was filtered from a small amount of egg flakes and put in the refrigerator “until H hour”.
    Two hours before the appointed time, I put the second chicken to boil. Carefully removed the foam, reduced the power to a minimum. Dropped a branch of green celery.
    She took out the broth from under Tutyrgan tovuk from the refrigerator. In a small amount of this broth (salted), I boiled amber, elastic, small noodles. This is 20 minutes before serving.
    Another part of the broth - boiled without salt, added dry dill, bay leaf, ground cilantro, boiled in it beautiful, young, halved young potatoes and three young thin carrots.
    Having installed a steamer cup on this pan, she warmed up the tutyrgan tovuk, pre-cut into portioned pieces, for a couple.

    When it came time to serve the noodles, I arranged cash registers on the kitchen table according to the number of guests. In each - a portion of boiled hand-made noodles, to which I also added a little butter so that it does not stick together. A handful of chicken meat. Here, thanks to my spouse, who, seeing that I was “sewn up”, and he controlled me, stood up to the stove (this is an unacceptable phenomenon in our family), and began to pour the transparent amber broth into casseroles. Me and my eldest could only carry.
    The noodles were good.
    Potatoes boiled in rich chicken broth were laid out on a dish. I salted it, floating, with coarse salt. Sprinkled with carrots, cut into "kopecks". On top I laid the pieces of stuffed egg under the skin of the chicken. The egg mixture with kaimak and pepper, poured into the carcass, cut into cubes, spread out along the edges of the dish. Garnished with green parsley sprigs. Sprinkled with dill.

    They ate with pleasure, praised, it was pleasant. My mother-in-law said that I had oltin kullar - golden hands, and was proud of me. Mom was saying something about me in Tatar with incredible speed. I failed to understand. "What did you say there?" I asked later. "Praised" - sparingly answered my mother.

    - Finally, everyone gathered. There will be a first prayer.
    - Then you drink tea with goodies on the table. You, as a hostess, must make sure that each guest puts on her plate from each gift. It doesn't matter that it's impossible to eat it all. All this will be “read” and each will take these gifts with her, with her relatives.
    - Next to the abystai, who will read, on the table, we leave some space so that she can put her books. As soon as she takes out the books, we stop drinking tea and the main action begins. Reading a holy book. The reading woman herself will make it clear when the time comes to “fold hands in prayer.” It doesn't bother you, does it? You may choose not to. And you can repeat the gesture. There is no sacrilege in this. And at such a table, your religion does not matter at all. After all, what difference does it make in what language the words of the prayer will sound? That's why everyone can join. Everything here is open and democratic.
    - Reading takes at least an hour. It is a peaceful and blissful process. Relax and trust the person who knows what he is doing. Before that, by the way, it would be nice to pour some tea into bowls for everyone, so that the water takes on the sacred vibration. You will then taste this tea, and it will seem unusual to you.
    - Abystay reads the texts until the time for prayer comes. She will give you a sign. And you take her to a room where she can pray in peace.
    - At this time - a bullet in the kitchen. Now noodles should be served - Tokmach and potatoes with chicken - Elesh. Finely chopped greens - lamb onion is best. And tea, tea, tea.
    - Then you eat, talk about life. (We talked about Tatar cuisine. Naturally, I directed it in this direction, and we talked and talked ...)
    - Then the abystai will again give a sign, and again the time of thanksgiving prayers will come.
    - Here you take out handkerchiefs, and give gifts to each guest. Put some money in a hotel for abystai - the amount is quite small. But that's not the point, is it? Ask each guest to put any goodies from the table into the bags they brought. And make sure that no one is ashamed to do so. Abystay needs special care. She will put a little - take her package and report as much as possible.
    - Next, you rush to the kitchen in a hurry to put in the brought dishes from the postponed gifts and return to each hostess. If anyone has elderly or sick people left at home - here in a jar of noodles with chicken, potatoes with chicken in a plastic container (they are ready), additional sweets, etc.

    The Quran is a holy book sent to us by Allah through the Prophet Muhammad (sallallahu "alayhi wa sallam). Therefore, it must be treated with awe and reverence. There are external and internal rules of conduct when reading the Quran. External ones are the purity of the reader, the environment around and the behavior itself internal - this is the mood of a person when reading, the state of his soul.

    External Rules for Reading the Qur'an:

    Be sure to be in a state of ritual purity. “Verily, this is a noble Quran, which is in the Preserved Scripture, only the purified ones touch it.”(Sura al-Waqia 77-79). That is, it is strictly forbidden for men and women to touch and read the Koran after intimacy before performing ghusl - a complete ablution, and for men also after janabah (pollutions). It is also forbidden for women to touch the Qur'an with their hands during menstruation and postpartum hemorrhage, but they can recite it by heart if they are afraid to forget what they know from the Qur'an or as a dhikr. If the reader has already done ghusl, then he must do taharat (small ablution, wudu), that is, only those who have cleansed themselves with taharat can touch the Quran. And most scholars agree on this. However, if there is a ghusl, but there is no taharat, they can read the Qur'an from memory without touching it. Abu Salam said: “It was reported to me by someone who saw the Prophet (PBUH) once recite something from the Quran after urinating before touching the water (to perform ablution)”. (Ahmad 4/237. It is necessary to dress like during prayer observing the awra (for men, the part from the navel to the knees is closed, for women everything is closed except for the face and hands), and of course the clothes must be clean.

    Try to cry, and even force yourself. The Koran says: “They fall on their faces, touching the ground with their chins and weeping. And this increases their humility.”. (Sura Al-Isra 109). Prophet Muhammad (PBUH) said: The Qur'an was sent down with sorrow and you weep while reading it. If you can't cry, at least pretend to cry". People asked one Alim: “Why don’t we cry while reading the Qur’an like the Sahaba (radiyallahu anhum) cried?” He replied: “Yes, simply because when the Sahaba read about the inhabitants of hell, they were afraid that they were among them and wept, and we always think that this is someone there, but by no means us. And when the companions of the Messenger of Allah (sallallahu "alayhi wa sallam) read in the Qur'an about the inhabitants of paradise, they said: how far we are before them and after we cried, and when we read about the people of paradise, we already imagine ourselves among them."

    Pay tribute to the verses of mercy and punishment as mentioned above. That is, if in some sura it is written about the Day of Judgment or hellfire, reading the Koran, he should be aware of the importance of what is written and be afraid with all his heart and rejoice when reading verses that describe the mercy of Allah Almighty.

    Recite in a singsong voice, because many hadiths give instructions for reciting the Qur'an in a singsong voice. One hadith says: Allah does not listen to anything like he listens to a prophet with a beautiful voice who recites the Qur'an aloud in a singsong voice". (Al-Maqdisi, "al-adab ash-shariyya", vol. 1, p. 741). The Prophet of Allah (PBUH) said: "Do not treat us who does not recite the Qur'an in a singsong voice." (Abu Dawud).

    Do's and Don'ts with regard to the Qur'an

    One cannot freely retell and translate the Qur'an. The Prophet (PBUH) said: Those who interpret the Qur'an according to their own understanding, let them prepare a place for themselves in the fire of Hell"(At-Tirmidhi, Abu Dawood and an-Nasai).

    The Qur'an should not be read for worldly gain or to stand out from other Muslims. Prophet Muhammad (PBUH) said: After reading from the Koran, ask for the goodness of Allah, ask for Paradise! Do not ask for a reward from worldly things (money, property). There will come a time when people will read the Qur'an in order to get close to people (to solve their worldly problems)."

    Desirable actions in relation to the Qur'an

Close the lid and let stand. Traditional Tatar pilaf can be prepared without tomato, then you should add any chopped vegetables or even fruits instead of it (pilaf will turn out sweet).

    To prepare teke, a young lamb brisket or the flesh of the back of a ham is taken. Separate the rib bone from the pulp of the brisket, and cut the flesh from the back so that a bag is formed. Separately, break the eggs into a deep bowl, add salt, pepper, melted and cooled butter and mix everything well. Pour the resulting filling into the lamb brisket or ham prepared in advance, sew up the hole. Put the finished semi-finished product in a shallow bowl, pour in the broth, sprinkle with chopped onions, carrots and cook until tender. When the tutyrgan teke is ready, place it on a greased pan, grease with oil on top and put in the oven for 10-15 minutes. Stuffed lamb is cut into portions and served hot.

    Balish with duck

    Dough - 1.5 kg, duck - 1 piece, rice - 300-400g, butter - 200g, onion - 3-4 pieces, broth - 1 glass, pepper, salt - to taste.

    Rice is usually added to belish with duck. First, cut the duck into pieces, then cut the flesh into small pieces. Sort the rice, rinse in hot water, put in salted water and boil slightly. Put the boiled rice in a sieve and rinse with hot water. Cooled rice should be dry. Add oil, finely chopped onion, the required amount of salt, pepper to the rice, mix all this with pieces of duck and make balish. Knead the dough in the same way as for the previous whites. Duck balish is made thinner than broth balish. Balish is baked for 2-2.5 hours. Half an hour before readiness, broth is poured into it.
    On the table belish with duck is served in the same frying pan. The filling is placed on plates with a large spoon, and then the bottom of the belish is cut into portions.

    Tunterma (omelet)

    5-6 eggs, 200-300 g of milk, 60-80 g of semolina or flour, 100 g of butter, salt to taste.

    Release the eggs into a deep bowl, beat thoroughly until smooth, then add milk, melted butter, salt, mix everything well, add semolina or flour and mix again until the consistency of thick sour cream.
    Pour the mass into a frying pan, greased, and put on fire. As soon as the mass thickens, put in the oven for 4-5 minutes. Lubricate the finished tunterma with fat on top and serve. Tunterma can be cut into rhombuses into portions.

    Hemp seed dumplings

    75 g of dough, 100 g of minced meat, 50 g of sour cream or 20 g of melted butter, 1 egg.

    I option. Place the cleaned hemp seeds to dry for 1-2 hours in the oven, crush in a mortar, sift through a sieve. Mix hemp flour with mashed potatoes and eggs. If the filling turned out to be cool, dilute it with a little hot milk.
    Prepare the dough in the same way as for other dumplings. Boil dumplings in salted water, put on a plate, season with sour cream or ghee and serve hot.

    II option. Crush hemp seeds in a wooden mortar, squeeze out excess fat, add sugar, salt, mix everything well to get a thick homogeneous mass. This mass is used as minced meat for dumplings.
    Prepare the dough in the same way as in option I.

    Gubadia with meat

    For one pan of Gubadia: dough - 1000-1200 g, meat - 800-1000 g, ready-made court - 250 g, rice - 300-400 g, raisins - 250 g, eggs - 6-8 pcs., melted butter - 300- 400 g, salt, pepper, onion, onion.

    Roll out the dough larger than the pan. Put it in an oiled pan and brush with oil on top. Put the finished court on the dough. Put rice on it in an even layer, then fried meat passed with onions through a meat grinder, a layer of rice again on the meat, hard-boiled, finely chopped eggs on rice and again rice. Put a layer of steamed apricots, raisins or prunes on top. Then pour plenty of melted butter over the entire filling.
    Cover the filling with a thin layer of rolled dough, pinch the edges and seal with cloves. Before planting in the oven, gubadia should be oiled on top and sprinkled with crumbs. Gubadiya is baked in the oven at an average temperature for 40-50 minutes. Cut the finished gubadia and serve hot in pieces. Gubadia in the context should represent pronounced layers of various products, harmoniously combined both in taste and in color.

    In 250 g of butter, put 500 g of sifted wheat flour, 20-30 g of granulated sugar and rub it all thoroughly with your hands. As you grind, the butter mixes with the flour and fine crumbs form. Before planting the gubadia in the oven, sprinkle it with crumbs on top. Gubadia is a rich round pie with a multi-layered filling. The filling consists of a court (dried cottage cheese), boiled friable rice, chopped egg, steamed raisins (apricots or prunes), ground beef with browned onions.

    For 1 kg of wheat flour: 10 pcs. eggs, 100 g milk, 20-30 g sugar, salt, 500-550 g oil for frying, honey 900-1000 g, 150-200 g sugar for finishing, montpensier 100-150 g.

    Prepared from flour of the highest grade. Release raw eggs into the bowl, add milk, salt, sugar, mix everything, add flour and knead soft dough. Divide the dough into pieces weighing 100 g, roll them into 1 cm thick flagella. Cut the flagella into balls the size of a pine nut and fry them, stirring, so that they are evenly fried in deep fat. Ready balls take on a yellowish tint.
    Pour granulated sugar into honey and boil in a separate bowl. The readiness of honey can be recognized as follows: take a drop of honey on a match, and if the trickle flowing from the match becomes brittle after cooling, boiling should be stopped. It is impossible to boil honey for too long, as it can burn and spoil the look and taste of the dish.
